Creamy Red Potato Salad

Ingredients

  • 1.5 lbs red potatoes quartered
  • ½ cup Mike’s Amazing Real Mayonnaise
  • 1 Tbsp Mike’s Amazing Dijoni Mustard
  • ½ cup diced onions
  • ½ cup diced celery
  • 1 Tbsp white vinegar
  • 1 Tbsp parsley chopped
  • 1 Tbsp sugar granulated
  • 1 tsp salt
  • ¼ tsp black pepper

Instructions

Cover potatoes with water in 4-quart saucepan; bring to a
boil over medium-high heat.

Reduce heat and simmer until potatoes are tender,
about 10 minutes. Drain and let cool.

In a separate bowl combine all ingredients except potatoes,
mix well allowing the sugar to dissolve.

Fold in the potatoes to the mayo mixture and serve.
