Street Corn Dip

Street Corn doesn't have to be on the cob, it can be in a dip! Bring to your next tailgate

Ingredients

  • 5 ears corn on the cobb, (shucked and silks removed) 
  • 1 cup Mike’s Amazing Real Mayonnaise 
  • 8oz sour cream 
  • 1 lime zest 
  • 1 lime juiced 
  • 1 Tbsp Tajin seasoning 
  • ¼ tsp smoked paprika 
  • 1 cup diced plum tomatoes 
  • ½ cup diced red onions 
  • 2 Tbsp cilantro chopped 
  • 1 cup cotija cheese crumbled  

Instructions

Preheat grill (broiler in oven can also be used). Cook corn
on grill turning frequently, about 10 minutes or until corn is crisp-tender and
lightly charred. Remove and set aside to cool.

In a bowl combine all ingredients and mix with a spoon.

Once corn is cool, carefully cut kernels off the cob.

Fold in corn to the mixture in the bowl, and refrigerate.

Serve with your favorite tortilla chip
