Pork Belly Bao Bun

Ingredients

For Apple Mustard Chutney:

  • 2 cup Mike’s Amazing Apple Cider Vinegar
  • 2 cup Mike’s Amazing Spicy Brown Mustard
  • 2 lbs green apples cored and diced
  • 2 Cups granulated sugar
  • 1 tbsp minced garlic
  • 2 tbsp minced ginger
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp chili powder
  • 2 tsp cinnamon powder
  • 2 tsp salt
  • 1 tsp all spice
  • 2 tbsp Mike’s Amazing Vegetable Oil

For Bao Buns:

  • 1 lb of crispy cooked pork belly
  • 8 frozen bao buns
  • 1 cup of shredded carrots
  • 1 cup of shredded daikon radish
  • thinly sliced green onions for garnish

Instructions

For Chutney:

  • In a large pot sauté heat the oil over medium high heat and
    cook onions until translucent

  • Add the ginger, garlic and spices and continue to cook for
    another 2 minutes

  • Add the diced apples and mix well, the add the vinegar,
    sugar, lemon zest, and lemon juice allow liquid to reduce by half

  • Once liquid has reduced turn off heat and add the spicy
    brown mustard

  • Allow to cool down and store in the refrigerator

For Bao Buns:

  • prepare bao buns according t package directions (steamed)

  • fill buns with prok belly, carrots, radishes, green onions
    and apple mustard chutney
